Hello friend.. just choose composition from “result comps” ,example: if you have 6 letters, just choose 6 letters comp in “Result comp” folder, and replace your letters, and go to footage folder in project window and select bg and right click choose image or video ” replace footage”that you want…

Unfortunately we cannot exclude leafs, but you can change grass and background.
